Amiwo (red cornmeal) with chicken

Ingredients

• 400 g corn flour (or roasted corn flour)Find in the shop →
• 1 chicken in piecesFind in the shop →
• 200 g tomato paste and 2 tomatoesFind in the shop →
• 2 onions, 3 garlic cloves, chiliFind in the shop →
• 4 tablespoons oilFind in the shop →
• 2 stock cubes, saltFind in the shop →

Method

1. Season and fry the chicken in the oil; set it aside.
2. In the same oil, fry the onions, garlic, blended tomatoes and tomato paste for 10 minutes.
3. Add 1 litre of water, the stock cubes, salt and chili; keep a bowl of sauce for serving.
4. Pour in the corn flour, stirring vigorously with a spatula.
5. Cook for 15 minutes over low heat, working it, until you have a smooth red paste.
6. Serve with the chicken and the kept sauce.
