Small, round, fluffy doughnuts sold all over West and Central Africa, flavoured with nutmeg.

Method

Mix the flour, sugar, yeast, nutmeg and salt.
Add about 400 ml warm water and beat into a smooth, sticky batter.
Cover and leave to rise for 1 hour, until doubled.
Drop balls of batter by hand or with a spoon into hot oil.
Fry, turning, until golden; drain and serve.
